My wife, our 7 year old son, 76 year old mother-in-low and I visited Belize in late June/early July for 16 days. It had been 3 years since we last visited Belize (1st visit for grandma) and we were eager to see what had changed. Our trip included visits to Placencia, Hatchet Caye, and San Ignacio general area. As I get closer to retirement, I also wanted to take a good look and see if Belize is still a place we would like to spend time in retirement. Without hesitation, the answer is yes.

Belize has a raw beauty and authentic feel that we find very appealing. As the world becomes more crowded, it's hard to believe that places like this still exist. We enjoy the small town feel in Belize. I still find it amazing to travel on many roads and see so few vehicles.

Hatchet Caye is a beautiful little island. The snorkeling is outstanding and we swam with nurse sharks, sea turtles, and sting rays. We sent quite a bit of time on the island just watching the pelicans dive bomb for fish. It was so nice to just enjoy the sea and panoramic vistas and relax in a hammock with a cold beer.

In Placencia, we stayed at Cozy Corner. We noticed this place 3 years ago when we stopped by for dinner. It's centrally located in Placencia Village on the beach so it was very easy to get to nearby shops and restaurants. The restaurant at Cozy Corner is very good and the coffee is brewed for early risers. Our favorite restaurant in Placencia was Omar's for delicious sea food. Fortunately, it was lobster season and Omar's creole version of lobster with all the herbs and spices was delectable.

The majority of our trip was spent in San Igancio general area. Duplooy's Jungle Resort is so beautiful and we've stayed there on several occasions. We stayed at the La Casita this time and enjoyed the long walk on the wooden deck overlooking the forest from the house to the dining area. So very tranquil, we absolutely loved it. The service was terrific and we enjoyed many fine meals there. We spent hours walking through Belize Botanical Garden and admiring the many fruit trees.

We combined our trip with a little bit of work planting some trees on property we purchased near Duplooy's. The excitement of our trip was encountering a fer-de-lance. A Belizean surveyor we were hiking with yelled at me to stop and not to move. I froze and he said a fer-de-lance was coiled up to strike. He slowly got a big stick and knocked it out. He advised they are territorial. We also saw a few non-venomous snakes which were beautiful.

Another highlight of our trip was meeting some traditional Mennonites. They travel by horse and wagon and I really admired their work ethic.

Our last stay was at Cahal Pech. We always come here for the incredible view overlooking San Ignacio and our son really enjoys the swimming pools. The food is good we particularly enjoyed the baby back ribs. We visited Chiquibul protected area with Roni Martinez to view the Scarlet Macaw. It was spectacular and awe inspiring to see and hear these beautiful birds in their natural environment from a distance. During our stay, we also visited Baldy Beacon which is one of the highest elevations in Belize.

One notable change is the greatly improved quality of the steaks in Belize. We had the best steak we've ever had in Belize at Guava Limb Cafe in San Ignacio. Very tender. We also tried the new restaurant Fuego Bar & Grill and had a delicious cheeseburger and chicken wings. We were very satisfied with the food choices in San Ignacio. Grace Chinese Restaurant had the coldest beer - right out of the freezer. :-)

For transporation in and around San Ignacio, we relied on taxis. I highly recommend Teddy Bear Shuttle Services (Cell: 667-1441). Theodore Valdes has a large, clean van in excellent condition. Several folks recommended him to me and I can see why. In addition to numerous trips around town, Teddy took us to Xunantunich and also to the airport when we left with a stop at the zoo. http://www.teddybearshuttle.com/

All in all, we had a wonderful trip. We made some new friends and hope to visit more of the region on our next visit. We heard that Flores, Guatemala is a very nice side trip.
